There are two ways to make cold press coffee. The traditional way is to immerse the beans in cold water and let time work its magic passively. The new way is active extraction; moving triple filtered cold water through a bed of coffee grounds over an extended period of time, typically ranging from 3 to 24 hours. The result is a smooth, low-acidic clean coffee that has some body and a wide range of nuanced flavours. The technique emphasizes any floral or fruity notes because the sugars from the coffee beans are extracted but not muddled by a long immersion.
